Ful medames — slow-cooked fava beans — has been eaten in Egypt since the time of the pharaohs. Ta'meya, Egypt's green falafel made with fava beans and fresh herbs, is unlike any falafel in the world. And feteer meshaltet, the flaky layered pastry, is a masterpiece of Egyptian baking.
